Recipe notes and expert tips
- Tortillas
- You can use either flour or corn tortillas. Corn tortillas will have a stronger flavor, but they will be nice and crispy; it’s your preference.
- Cooking
- If you prefer, place your pizza in a cast iron skillet, move the oven rack approximately 6 inches from the broiler, and broil until the cheese has melted and the pizza is hot.
- Storage
- Store in an airtight container for up to 3 days, but for best results, cook fresh.
How to store leftover tortilla pizza
Cool the tortilla pizza to room temperature to stop it from sweating and becoming soggy, and then place it in an airtight container for up to 3 days.
These pizzas are always best when fresh, so we recommend making them as and when you want to eat them to get the freshest crispy pizza crust.
Out of tortillas?
If you are out of tortillas and want to avoid the fuss of pizza dough (although we have to admit that we have a fantastic Ooni pizza dough recipe), try English muffin pizzas, flatbread pizza, or pizza bagels.
Pizza toppings and sauce
Be creative and use your favorite toppings; recreate a Margherita pizza or an olive pizza; don’t overload your toppings, or the tortilla will go soggy.
Choose your favorite pizza sauce; you can use pizza sauce, marinara sauce, pesto sauce, or BBQ sauce, depending on what pizza toppings you choose.
And if you’re curious, here’s how to make homemade pizza.
