How to make oven-roasted fingerling potatoes with step-by-step instructions

Preheat the oven to 400°F/205°C.

Wash and pat dry your fingerling potatoes, then cut them in half lengthwise using a kitchen knife.

Place them in a bowl and toss in extra virgin olive oil, Italian seasoning, garlic, kosher salt, and pepper.

Place the potatoes in a mixing bowl and add olive oil, Italian seasoning, fresh garlic, kosher salt, and pepper, and toss to combine.

Place each fingerling potato cut side down on a large rimmed baking sheet, ensuring they don’t touch (you may need two baking sheets).

Bake until golden brown and they are perfectly crispy.

Place them in the hot oven and bake them for 25 – 35 minutes, flipping them halfway through.

When cooked, they should be golden brown, crispy on the outside, and fork-tender on the inside.

Remove the roasted potatoes from the oven and place them in a serving bowl garnish with fresh parsley (or your favorite fresh herbs such as fresh rosemary and fresh thyme) and optional vegetarian Parmesan cheese.
