How To Make Air Fryer Sweet Potato Wedges With Step-By-Step Instructions

If preheating is needed, preheat your air fryer to 450°F/230°C.
Wash and dry your sweet potatoes; it’s essential that they are totally dry.
Peeling is optional; we prefer our sweet potato skin on, but peel them if you prefer.
Using a sharp knife, place your potatoes on a cutting board and cut the potatoes into wedges, firstly in half lengthwise, then again, so they are in quarters.
The ends of your potato wedges need to be approximately ½ inch thick, so repeat the process if you cut a large sweet potato.
Place your sweet potato slices in a large bowl, drizzle with extra virgin olive oil (or vegetable oil; avocado oil will also work), and toss to coat the potatoes evenly.
Add garlic powder (sub with onion powder if needed), dried rosemary, smoked paprika, kosher salt, and black pepper in a separate bowl and combine.
Pour the mixture on top of the potato wedges and toss to coat evenly.
Place the seasoned sweet potato wedges in a single layer in your air fryer basket, being careful not to overcrowd, or you won’t get crispy wedges.
Air fry the wedges for 14 – 20 minutes, giving them a little shake halfway through.
Remove the cooked sweet potato wedges from the air fryer basket, transfer them to a plate lined with a paper towel to remove any excess oil, and then serve immediately.
You may have to repeat the process and batch cook until all the sweet potatoes are cooked.

Cut sweet potatoes don’t brown, like Russet or Yukon Gold potatoes, so you can cut them and store them in the fridge, and there’s no need to submerge them in cold water.
How To Store Leftover Sweet Potato Wedges
Air-fried sweet potato wedges will keep for up to three days when stored in the fridge in an airtight container.
They’ll also freeze for up to three months. Please note that they will never retain their ‘just cooked’ crispiness.
Why Are My Sweet Potato Wedges Not Crispy?
There may be a few reasons your sweet potato wedges aren’t crispy.
- You may have cut them too thick; you won’t get that crisp if the wedges are too thick.
- You may have overcrowded the air fryer basket, making them soggy.

Crispy Air Fryer Sweet Potato Wedges Recipe

- 2 tablespoons olive oil
- ¾ teaspoon garlic powder
- ¼ teaspoon dried rosemary

- Salt and pepper to taste
Instructions
For the maple syrup ketchup (optional):
- In a small bowl, combine ketchup, mayonnaise, maple syrup, and salt to taste.
For the sweet potato wedges:
- Preheat your air fryer to 450°F/230°C.
- Wash and dry your potatoes, there's no need to peel them but peel them if you prefer. Using a sharp kitchen knife, slice each potato in half lengthways, then cut again making them into quarters, the ends need to be approximately ½ inch, so repeat the cutting if you need to, depending on the size of your potatoes.3 medium sweet potatoes
- Place your wedges into a large mixing bowl and drizzle with olive oil, then toss, ensuring that they are all evenly coated.2 tablespoons olive oil
- In a separate bowl, combine garlic powder, dried rosemary, paprika, salt, and black pepper. Then tip the seasoning onto the wedges and toss to evenly coat.¾ teaspoon garlic powder, ¼ teaspoon dried rosemary, ½ teaspoon smoked paprika, Salt and pepper to taste
- Place the wedges on in your air fryer basket, in a single layer, not touching each other, you may need to air fry in batches. Cook for 14 – 20 minutes, then, use tongs to flip them halfway through to ensure an even cook. Remove the cooked wedges from the basket, place them on a serving plate, and serve with maple ketchup or your favorite dipping sauce. Enjoy!
