Place the halves in a mixing bowl and add olive oil, Italian seasoning, minced garlic (you could use garlic powder), kosher salt, and freshly ground black pepper, and toss the potatoes to ensure they are evenly coated.
Place cut side down in the air fryer basket and your preheated air fryer, and cook for 12 – 14 minutes, flipping the fingerling potatoes halfway through to ensure an even cook.
When cooked, your fingerling potatoes will have a deliciously crispy texture and will have turned a lovely golden brown color.
Remove them from the air fryer basket, place them in a serving bowl, and garnish with fresh herbs and optional vegetarian grated Parmesan cheese.
Serve immediately and enjoy!

How to store leftover air fryer fingerling potatoes
Keep leftover air fryer fingerling potatoes in the fridge for 3 – 4 days; they’ll still be safe to eat.
What’s the difference between fingerling potatoes and baby potatoes?
Fingerling potatoes are a variety of potatoes that are small and have a distinctive finger shape. In contrast, baby potatoes are simply small, oval, or round-shaped, immature potatoes of any potato variety.
Fingerling potatoes have a nutty, earthy flavor, and they have a slightly waxy skin.
Why are my air-fried potatoes soggy?
If you haven’t dried your fingerling potatoes before cooking, that’s the first thing to look at.
It could also be that you’ve overcrowded the air fryer basket; make sure there’s enough space between them for the hot air to circulate around them.
Air fryers all cook slightly differently, so it could also be that you need somewhat longer and possibly at a higher temperature; you’ll need to experiment for your specific model.
Do I need to peel fingerling potatoes?
No, you don’t have to peel them.
You do, however, have to wash fingerling potatoes before cooking, and please ensure you have dried them before air frying.
