What ingredients do I need?
You’ll need all the ingredients shown in the photograph below.
You don’t always want to snack on traditional French fries, sometimes you crave spice, you crave flavor, and you need it to be simple – sound familiar? You’re going to love our masala fries!
What do I serve masala fries with?
We love nothing better than dipping masala fries in a delicious bowl of cucumber raita or even sour cream and chives.
Dip them in your favorite dipping sauces, they are perfect dipped in chili sauce!
But also great dipped in sriracha aioli or chipotle aioli.
But these spicy fries are perfect with a veggie burger or Indian street burger.
If you’ve got leftovers, then make them into a magnificent lunch for the next day and make them into a naanwich, just like our chili potato naanwich.
What is masala?
There is no set recipe for masala.
Masala is a blend of different spices that can either be in powder form or as a paste.
We’ve used two different blends of masala in our masala chips recipe.
Garam masala is a blend of cumin, cardamom, cinnamon, nutmeg, coriander, black pepper, and cloves.
And we’ve used chaat masala, which is a different spice blend usually made of spices including cumin, coriander, red chili powder, amchoor, and asafoetida.
Can I use frozen French fries?
Yes, you can.
Frozen fries (or frozen chips) make great masala fries.
Just follow the packet cooking instructions.
Are French fries chips?
Depending on where you are in the world, you may well call fries chips.
If you are from the UK, you’ll be calling this a masala chips recipe!
How do I store leftover fries?
Store leftover masala fries can be stored in an airtight container for up to 3 days.
If you haven’t used frozen fries to make them, then they can be frozen for up to 3 months.

How to make masala fries with step by step instructions
Making homemade masala fries is easy if you follow our simple instructions.
Preheat your oven to 400F/205C.
If you are making homemade French fries
Cut your potatoes into long fries, approximately 1 1/2 inches thick.
Submerge them in water for a minimum of 10 minutes, but the longer the better to remove excess starch.
Then, drain the fries and pat them dry, using a kitchen towel.
If using frozen French fries
You can cook your frozen French fries (or frozen chips) from frozen.
Please see the manufactures instructions for cooking times.
Making the masala fries (masala chips)
Add your fries to a large mixing bowl.
Then add olive oil (or vegetable oil), cornstarch (corn flour), chilli powder, garam masala, chaat masala, ground turmeric, garlic powder, lemon juice, and kosher salt.
Toss to coat evenly and place them on a baking sheet or baking tray in a single layer.
Place the masala chips in the oven and cook for approximately 40 minutes.
When they are ready, they should be deliciously crispy fries!
Serve immediately and enjoy!

Easy masala fries recipe
Utensils
Ingredients
- 2 medium Russet potatoes washed and dried or frozen fries
- 2 tbsp Olive oil
- 4 tbsp Cornstarch
- 1 tsp Chili powder
- ¼ tsp Garam masala
- ¼ tsp Chaat masala
- ¼ tsp Ground turmeric
- 1 tsp Garlic powder
- 2 tsp Lemon juice
- 1 tsp Kosher salt
Instructions
- Preheat your oven to 400°F/205°C
If you are making homemade French fries
- Cut your potatoes into long fries, approximately ½" thick, then place them in a mixing bowl and soak for a minimum of 10 minutes2 medium Russet potatoes
- Drain your fries and pat them dry. Add them to a dry mixing bowl, add oil, cornstarch, chili powder, garam masala, chaat masala, ground turmeric, garlic powder, lemon juice, and kosher salt, and toss until the fries are evenly coated. Lay the fries on a baking tray in a single layer2 tbsp Olive oil, 4 tbsp Cornstarch, 1 tsp Chili powder, ¼ tsp Garam masala, ¼ tsp Chaat masala, ¼ tsp Ground turmeric, 1 tsp Garlic powder, 2 tsp Lemon juice, 1 tsp Kosher salt
- Cook for approximately 40 minutes until the fries are crispy, remove from the oven, serve immediately and enjoy!
If using frozen French fries
- You can cook your frozen French fries (or frozen chips) from frozen. Please see the manufactures instructions for cooking times2 medium Russet potatoes
- Then add olive oil (or vegetable oil), cornstarch (corn flour), chili powder, garam masala, chaat masala, ground turmeric, garlic powder, lemon juice, and kosher salt. Place your fries in a mixing bowl and toss them in all the ingredients2 tbsp Olive oil, 4 tbsp Cornstarch, 1 tsp Chili powder, ¼ tsp Garam masala, ¼ tsp Chaat masala, ¼ tsp Ground turmeric, 1 tsp Garlic powder, 2 tsp Lemon juice, 1 tsp Kosher salt
- Lay the fries on a baking tray in a single layer. Place them in the oven and cook until crispy on the outside and soft on the inside, approximately 40 minutes. When they are ready, they should be deliciously crispy fries
Notes
Quickly make your own garam masala Spice it up
If you like your fries hot, then add more chili powder Storage
Store in the fridge in an airtight container for up to 3 days, freeze for 3 months but do NOT refreeze if you’ve used frozen fries, they don’t refreeze well
