We make these delicious honey roasted carrots as part of our Sunday roast dinner, they’re a fall side dish that gets eaten in a flash, they really are everyone’s favorite!

We love to roast carrots and experiment with different flavors, there’s nothing more satisfying than seeing your family putting a second helping of roasted carrots on their plate.

What ingredients do I need?

You’ll need all the ingredients shown in the photograph below.

Ingredients for roasting carrots, carrots, olive oil, salt, cider vinegar, cinnamon, honey or maple syrup, and freshly ground black pepper.

How to make honey roasted carrots with step-by-step instructions

Making our honey-roasted carrot recipe is easy if you follow our simple instructions.

Preheat your oven to 180°C/350°F.

Bring a large pan of water to a boil and then add your fresh carrots, bring the water back up to a boil and cook for 5 minutes.

Next, drain the cooked carrots and leave them in a colander to dry for 3 minutes.

Peel, slice, boil and drain your carrots.
Boil your carrots and leave them to drain.
Place in roasting tin and add salt and pepper.
Place the semi cooked carrots in a roasting tin and season.
Add olive oil and honey to a bowl.
Mix olive oil, honey, cider vinegar, and nutmeg together.

Place your semi-cooked carrots on a large, prepared baking sheet or in a roasting tin and season with kosher salt and coarse ground black pepper.

In a jug, mix the olive oil, honey (or maple syrup), cider vinegar, and nutmeg.

Now, brush your carrots with the oily mixture and place the baking sheet with the semi-cooked carrots in the oven, cook for 25 – 30 minutes, turning half way to ensure they cook evenly.

Cook until golden brown and soft.

When the honey-roasted carrots are cooked, they will have turned a golden brown and be soft.

Remove them from the oven and serve immediately.

We’ve even been known to eat them as a snack, and we love to dip them in sour cream and chives, blue cheese dressing, or garlic dip.

What are the best carrots to oven roast?

Fresh carrots are always the best roasting carrots.

The choice is yours as to which type of carrot you prefer to roast, imperator carrots, baby carrots, or rainbow carrots are the most popular

If you want to make roasted baby carrots, just follow this recipe, and check on them after 20 minutes of cooking.

Do I have to peel carrots to roast them?

No, you don’t need to peel carrots when making honey roasted carrots.

All the goodness is in the skin, so all you need to do is to make sure that the carrots have been washed and that’s enough.

You’ll find that your honey-roasted carrots are much tastier with their skins left on.

Whole carrots or batons?

For this roasted carrot recipe, we’ve used carrot batons, but whole carrots work very well too, you’ll just need to adjust the roasting time.

How do I store leftover roast carrots?

Our honey roasted carrots store well.

Just place them in the fridge in an airtight container and they will keep for up to 3 days.

Ingredients

  • 2 lbs Carrots halved length ways and then quartered
  • Kosher salt and coarse ground pepper to taste
  • 2 tbsp Olive oil
  • 2 tbsp Honey
  • 1 tbsp Cider vinegar
  • ¼ tsp Nutmeg

Instructions
