It’s important to realize that many stuffing recipes use chicken broth, which naturally makes them unsuitable for vegetarians.
Our recipe doesn’t use any kind of broth and certainly not chicken broth!

Make your own poultry seasoning
Making homemade poultry seasoning is easy, it just takes 5 minutes and 6 ingredients, dried sage, dried thyme, dried marjoram, dried rosemary, freshly ground black pepper, and then finally, ground nutmeg.

Fresh herbs or dried herbs?
In our stuffing recipe, we’ve used dried herbs purely for ease, this recipe is store cupboard ingredients.
You can definitely use fresh herbs if you have them.
What’s the best bread to use?
We used wholemeal bread for our breadcrumbs, but you can use sandwich bread, white bread, or any bread that you have.
We’ve made our own breadcrumbs, rather than buying pricy store-bought breadcrumbs.
Breadcrumbs are easy to make, just place the bread slices in your food processor and blitz them until you have a fine consistency.
We don’t use dried bread cubes for this recipe, as these are stuffing balls.
What do you eat stuffing with?
Just because vegetarians don’t eat turkey or chicken, that doesn’t mean that they should miss out on the delicious stuffing.
We eat our stuffing alongside a roast dinner with nut roast, roasted potatoes, roast carrots, Yorkshire pudding, and delicious red wine gravy.

How do I store them?
The great thing about our stuffing recipe is that these tasty little balls will keep in an airtight container in your fridge for up to 3 days.
They will also keep in your freezer for up to 3 months.
This makes them an ideal Thanksgiving stuffing recipe when you want to batch cook and get ahead.

How to make the best stuffing recipe with step-by-step instructions
Making our best stuffing recipe is easy if you follow our simple instructions.
Full measurements in both US customary and metric are available in the printable recipe card below.
Preheat your oven to 350°F/180°C.
Heat the olive oil and butter in a frying pan over medium heat, add a pinch of salt, then fry your onion, stirring occasionally, until soft and translucent approximately 15 minutes.

Now add poultry seasoning, stir to combine, turn off the heat and then leave the mixture to cool for 5 -10 minutes, until the mixture is cool enough to touch.
In a large bowl, add the onion mixture, your breadcrumbs (not bread cubes), and the beaten egg, stir thoroughly to combine, and season with salt and pepper, to taste.
Now, divide the mixture into 12 equal parts and then roll each piece into a small ball.

Place them on a prepared baking sheet and bake for approximately 25 minutes.
When the stuffing balls are cooked, they will be golden brown.
Remove from the oven and serve immediately.
