Easy Double Chocolate Chip Cookies Recipe

What ingredients do I need?
You’ll need all the ingredients shown in the photograph below.

Do I need to chill the dough before baking?
No, you don’t.
This is the beauty of this cookie recipe.
You can make the cookie dough and be baking in no time!
Do I need a stand mixer?
In an ideal world, yes.
But stand mixers take up space and not everyone has got a large kitchen.
So while it’s great to have one, it’s not crucial.
A good handheld electric mixer will also do the job.
And failing that, then a good old wooden spoon with a healthy quantity will suffice.
Which chocolate chips are best?
We use semi-sweet chocolate chips.
You can either use small or large ones.
You could use white chocolate chips, but we prefer to keep those for our white chocolate chip cookies.
A friend of mine loves it when I mix in some peanut butter chips, giving the cookies a real nutty taste!

How to make double chocolate chip cookies with step-by-step instructions
Making our double chocolate chip cookies is easy if you follow our simple instructions.

Preheat oven to 375F/180C.
In a mixing bowl sift together unsweetened cocoa powder, flour, baking soda, and salt, and then set aside.
Using a stand mixer or handheld electric mixer, cream unsalted butter, granulated sugar, and light brown sugar, and on medium speed, mix until light and fluffy.
Then, add your egg and vanilla extract and mix until combined.

Next, on low speed, gradually mix in your flour mixture until fully combined.
Finally, stir in the chocolate chips.
Using a cookie scoop, scoop the cookie dough into balls, approximately 1.5 tablespoons large.

Place the cookie dough balls on a prepared baking sheet approximately 2 inches apart.
Bake until the edges are golden, approximately 10 – 12 minutes, then remove from the oven.
Leave the cookies to cool before transferring them to a wire rack to cool completely.

- ⅓ cup unsweetened cocoa powder
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter softened
- ⅓ cup granulated sugar
- ½ cup light brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 375°F/180°C
- In a mixing bowl, sift together cocoa powder, flour, baking soda, and salt, then set aside⅓ cup unsweetened cocoa powder, 1 cup all-purpose flour, ½ teaspoon baking soda, ½ teaspoon salt
- Using a stand mixer or handheld electric mixer, cream butter, granulated sugar, and light brown sugar, and mix on medium speed until light and fluffy. Then add your egg and vanilla and mix until combined. Then, on low speed, gradually mix in your flour mixture until combined, and then stir in chocolate chips½ cup unsalted butter, ⅓ cup granulated sugar, ½ cup light brown sugar, 1 large egg, 2 teaspoons vanilla extract, 1 cup chocolate chips
- Using a scoop, scoop the dough mixture of approx. 1½ tablespoons onto a prepared baking sheet, approx. 2 inches apart
- Bake until the edges are golden, approx. 10 minutes, then remove from the oven and leave for a few minutes before transferring them to a cooling rack. Enjoy your cookies!

What is a prepared baking sheet?
When you bake your cookies, it’s important to know that they are not going to stick to the baking sheet.
You’ll need to line it with parchment paper or silicone baking mats.
We always use a silicone baking mat, you can wash them and reuse them time after time.
We like these mats as they are easy to trim to the size of your baking sheets (or whatever else you may use).
How do I store leftover double chocolate chip cookies?
Leftover cookies? What are they?
Seriously though, if you have any leftovers, or if you’re making them ahead, keep them in an airtight container for up to 4 days.
You can also freeze the baked cookies or the cookie dough balls in portions and they freeze for up to 3 months.
