How to Make Halloween Whoopie Pies with Step-by-Step Instructions

A complete printable recipe and the measurements in both US customary and metric are available in the recipe card below.

Crafting the Perfect Whoopie Pie Base

Start by preheating your oven to 355°F/180ºC.

In a large bowl, whisk together your dry ingredients: all-purpose flour, unsweetened cocoa powder, baking soda, and salt.

In a separate bowl, blend the brown sugar, melted butter, milk, egg, and vanilla extract using an electric mixer.

Once smooth, fold in the dry ingredients, being careful not to over-mix the cake mix. This will ensure your pies are light and fluffy.

Once your batter is ready, scoop tablespoon-sized amounts onto a parchment-lined cookie sheet. A cookie scoop is great for this!

Baking to Perfection

Pop your whoopie pies into the preheated oven and bake for about 10 minutes. You’ll know they’re done when they spring back slightly to the touch.

Once baked, transfer them to a wire rack to cool completely. This step is crucial; if they’re even slightly warm, the filling might melt and create a mess.

Whipping Up the Buttercream Filling

While your pies are cooling, it’s time to prepare the filling. In another mixing bowl, mix all the filling ingredients, leaving out the food coloring for now.

Once your filling is creamy and smooth, divide it into two bowls. Add orange food coloring to one and green to the other, mixing until you achieve your desired consistency and color.

Assembling Your Monsters

Now for the fun part! Take one whoopie pie half and spread about 1½ tbsp of your colored filling on the flat side.

You can either use a piping bag or a spoon to do this. Arrange white chocolate chips as teeth, and then place another whoopie pie half on top, creating a sandwich.

Place another pie on top of the filling and add eyes.

For the eyes, dab a bit of filling on the back of each candy eye and stick them onto your monster. Repeat until all your monsters are assembled.

The Final Touch

Once all your monsters are assembled, let them sit for a bit to allow the filling to set. This is so they hold their shape when served.

And there you have it, delightful Whoopie Pie Halloween Monsters ready to be devoured!

Notes

  1. Cocoa Powder: The type of cocoa powder you use can influence the flavor and color of your chocolate whoopie pies. Unsweetened cocoa powder is recommended for this recipe to give a rich chocolatey taste without making the pies too sweet. Remember, the filling will add sweetness, so it’s all about balance!
  2. Filling Consistency: When preparing the filling, aim for a creamy consistency that’s easy to spread but not too runny. If you find your filling is too thick, you can add a tablespoon of milk to loosen it up. Conversely, if it’s too runny, a bit more powdered sugar can help thicken it.
  3. Get Creative: While candy eyes and white chocolate chips are suggested for the monster look, don’t be afraid to get creative! Vegetarian mini marshmallows, colored sprinkles, or even licorice strands can be used to give your monsters their own unique personalities. It’s a fun way to involve kids in the decorating process too.
  4. Can I use natural food coloring for the filling? Yes, natural food coloring works well. The color might be slightly less vibrant compared to artificial dyes, but it’s a great alternative for those looking for a more natural option.
  5. Avoid Over-mixing: It’s tempting to keep mixing until you have a super smooth batter, but over-mixing can lead to dense whoopie pies. Mix just until the ingredients are combined to ensure your pies are light and fluffy.
  6. Different flavors for the whoopie pie base: While this recipe uses a chocolate base, you can experiment with other flavors like pumpkin, red velvet, or even vanilla. Just ensure the consistency is similar to achieve the best results.
  7. Storing Before Serving: If you’re not serving your Whoopie Pie Halloween Monsters immediately after assembling, it’s best to store them in a cool place. This helps the filling set properly and prevents it from oozing out. If it’s a particularly warm day, consider popping them in the fridge for a short while. If you’re making them the day before, we recommend assembling them with the filling and decorations on the day of your event for the best flavor and texture.
  8. Refrigerate: Place the monsters in an airtight container, ensuring they’re in a single layer to prevent them from sticking together. They can stay fresh for up to 3-4 days when refrigerated. Before serving, let them sit at room temperature for about 15 minutes to bring out their best flavor.
  9. Freezing: Place them on a baking sheet and freeze until solid. Once frozen, transfer them to a resealable plastic bag or airtight container, separating layers with parchment paper. This method prevents them from sticking together and ensures they retain their shape. When you’re ready to enjoy them, thaw in the refrigerator overnight or at room temperature for a few hours.

How to Store Leftover Monster Whoopie Pies

Are you making them ahead, or do you have leftovers? Here’s how to store them.

Keeping Them Fresh in the Fridge

If you find yourself with leftover Halloween Whoopie Pies, storing them in the fridge is best.

Place the monsters in an airtight container, ensuring they’re in a single layer to prevent them from sticking together. They can stay fresh for up to 3-4 days when refrigerated.

Before serving, let them sit at room temperature for about 15 minutes to bring out their best flavor.

Freezing for Longer Shelf Life

For a longer storage solution, try freezing your monsters. First, place them on a baking sheet and freeze until solid. Once frozen, transfer them to a resealable plastic bag or airtight container, separating layers with parchment paper.

This method prevents them from sticking together and ensures they retain their shape. When you’re ready to enjoy them, thaw them in the refrigerator overnight or at room temperature for a few hours.

Avoiding Moisture Build-Up

Moisture is the enemy of freshness, especially for desserts like whoopie pies. If storing in the fridge, make sure your container is airtight.

When freezing, remove as much air as possible from the resealable bag. This helps maintain the texture and flavor of your Whoopie Pie Halloween Monsters, ensuring they taste amazing even days after making them.

What to Serve with Whoopie Pie Halloween Monsters

Don’t just stop with cookie monsters, here are some great ideas to pair them with.

A Spooky Beverage Pairing

While these monsters are delightful on their own, pairing them with a themed beverage can elevate the entire dessert experience.

Consider serving them with a glass of “witch’s brew” – our Cranberry, Orange, and Pomegranate Spritzer is perfect for all ages. For a more adult treat,  our classic Halloween Cocktail is a spooky, spicy, and fruity delight!

Complementary Desserts

If you’re hosting a Halloween party and want a dessert spread that’s both diverse and thematic, consider adding other spooky treats alongside your Halloween Whoopie Pie Monsters.

Pumpkin cheesecake, a pumpkin roll, Witch Finger Cookies, and Halloween Cookies are all fantastic options. They not only add variety but also create a visually appealing dessert table that’s sure to impress.

A Savory Counterpart

For those who like to balance their sweet treats with something savory, consider serving some Halloween-themed savory snacks.

Cheese balls shaped like pumpkins, Halloween Frankenstein Snacks, or even a simple bowl of sweet and salty popcorn can provide a delightful contrast to the sweetness of the whoopie pies.
