Roasting sweet potatoes is one of our favorite ways to cook sweet potatoes, but when you turn them into crispy bite sized cubes, then that’s where the magic happens.

How to make roasted sweet potato cubes with step-by-step instructions

Preheat your oven to 425°F/220°C and ensure the oven rack is on the middle shelf. Line a large-rimmed baking sheet with parchment paper or a sheet pan and add the potato cubes, don’t overcrowd them, or they’ll become soggy.

Drizzle with olive oil, then sprinkle cumin, garlic powder, smoked paprika, kosher salt, and pepper.

Using your hands, toss the cubes in the olive oil and spice mixture, ensuring they are well coated, then spread them in a single layer.

Roast the potato cubes until they are crispy on the outside but fork-tender on the inside, approximately 25 – 30 minutes.

Place in a single layer on a baking sheet and roast until edges are crispy, golden, and caramelized.

They will start to caramelize on the bottom, so resist the temptation to stir them.

Remove from the oven, sprinkle with fresh parsley, and serve immediately as a side dish or a snack with the dipping sauce.

Do I have to peel sweet potatoes?

It’s your choice; the skin of sweet potatoes is edible; you can quite easily give the potatoes a good scrub, run them under water and then use them.

On oven-roasted sweet potatoes, we’ll keep the skin on, as we love the flavor and texture of the sweet potato skin.

But for sweet potato cubes, we prefer to peel them when making roasted sweet potato cubes; we prefer the texture, but like we say, it’s entirely personal choice.

What to serve sweet potato cubes with

Cubed roasted sweet potatoes are delicious as a side dish to stuffed peppers, roasted beet salad, and air fryer asparagus. Or they make a great addition to tacos.

They are insanely delicious when dipped in dipping sauce for sweet potato fries, maple syrup ketchup, or garlic aioli.
