You can use either canned corn, fresh corn, or frozen corn for this recipe, depending on the seasonal availability.
In summer and being a key ingredient, corn on the cob is our go-to when we can find it, especially if it’s sweet white corn! Cooked frozen corn or canned corn works just as well.
For fresh corn
Begin by grilling the corn on the cob, turning it occasionally with tongs.
Cook corn until slightly charred all around. Remove the roasted corn from the grill and leave it to cool. Then using a sharp knife, cut the kernels off the cob.
For frozen corn or canned corn
Cook according to the packet’s instructions.
When the corn is ready
Place the prepared corn in a large mixing bowl and add salt, then set aside.
Combine the red onion, fresh cilantro, jalapeño peppers, roasted poblano pepper, lemon, and lime juice in a medium bowl.
Add the mixture to the corn kernels and toss to combine.
