Spicy, citrusy, juicy chili and lime corn on the cob, cooked to perfection in your oven – who needs the grill? Our easy corn on the cob recipe is one of our favorites when we want corn but want to spice it up a little!

What ingredients do I need?

You’ll need all the ingredients shown in the photograph below.

Ingredients needed salt, corn on the cob, butter, lime, chili powder, and red chili.

Sink your teeth into this insanely tasty corn on the cob, the perfect sweetness with a chili and lime kick to it. Make more than you need. A lot more.

What do I serve chili lime corn on the cob with?

Our chili lime corn is perfect as an appetizer on its own.

But it’s perfect as part of a main meal.

Pair it up with a veggie burger, peri peri fries, onion rings, and coleslaw and you’ve got a tasty meal!

Make it vegan

The only ingredient in this delicious recipe that is not suitable for vegans is butter.

Simply replace it with vegan butter and follow the instructions.

Simple!

We love grilled corn, but we don’t always have the time or inclination to fire up the grill.

That’s why our chili lime corn is one of our favorite recipes.

Because it’s simple.

You don’t get the slightly charred effect and taste that grilled corn has.

But it’s soft and SO juicy, that it’s still a real treat to eat!

How do I store corn on the cob leftovers?

Our corn on the cob stores well and will keep in the fridge in an airtight container for up to 3 days.

If you are using fresh corn, then they will freeze for up to 2 months.

Recipe notes and expert tips

  • Lime zest
    Before you squeeze your lime juice, zest the lime and add to the butter for an extra citrus kick!
  • Frozen corn
    If you don’t have fresh corn, then simply use frozen instead, defrost before using.
  • Storage
    Store in an airtight container for up to 3 days, and freeze (only if using fresh) for up to 2 months.

How to make chili lime corn on the cob with step by step instructions

It’s easy to make our lime and chili corn on the cob recipe if you follow our simple instructions.

Preheat your oven to 400°F/205°C.

In a small bowl, add butter, lime juice, chili powder, red chilies, and kosher salt, and mix to combine.

Then, spread the chili lime butter mixture evenly over your corn on the cob and place each cob in aluminum foil.

Wrap the individual cobs in foil and cook for approximately 20 minutes.

Seal the foil, place them on a baking sheet, and cook for approximately 20 minutes.

Remove from the oven, unwrap each corn on the cob, and spread any remaining butter evenly over the corn.

Garnish with optional lime wedges and fresh cilantro, and serve immediately! .

Ingredients

  • 2 tbsp Unsalted butter softened
  • 1 Lime zested and juiced
  • 1 tsp Chili powder
  • 1 Red chili stalk and seeds removed, finely chopped
  • 4 Corn on the cob

Instructions

  • Pre heat your oven to 400°F/205°C
  • In a mixing bowl, add butter, lime juice, lime zest, chili powder, red chilies, and kosher salt, and mix together. Then spread evenly on the cobs, wrap them in foil and place on a baking sheet, and then in the oven
    2 tbsp Unsalted butter, 1 Lime, 1 tsp Chili powder, 1 Red chili
  • Cook until tender, approximately 20 minutes
  • Unwrap the cooked cobs, serve immediately and enjoy!
