In a large mixing bowl, whisk flour, baking soda, cornstarch, and salt.

Using a stand mixer or a handheld mixer, cream butter, granulated sugar, and brown sugar, until it’s light and fluffy.

Then add egg and vanilla extract and mix.

Slowly add the dry ingredients and mix until combined.

Now, stir in the white chocolate chips and chopped macadamia nuts, cover the cookie dough and chill for a minimum of 2 hours.

Preheat your air fryer to 300F/150C.

Place air fryer parchment paper in your air fryer basket, and, using a cookie scoop, scoop the cookie dough into balls approximately 1½ tablespoons large.

Cook for 5 – 8 minutes, leaving them to cool slightly before moving them to a cooling rack.

Place the cookie dough balls in the basket, leaving a 2 inch space between them, and air fry for 5 – 8 minutes until they are lightly golden brown around the edges. You will probably have to work in batches.

Remove the air fryer basket and let the cookies cool for a couple of minutes before transferring them to a wire rack to cool completely. If you move them too soon, they will crumble and break up.

Air fry until lightly brown on the edges, approx. 5 – 8 minutes. Then, remove them from the air fryer but leave them in the basket for a few minutes, then transfer to them a cooling rack.
