Making potato tacos is a fun and easy process. Here’s how you can whip up this delightful meal in your kitchen:

Preparing the Sweet Potatoes

Start by heating your oven to 355°F (180°C). Next, wash and cube the sweet potatoes. You don’t need to peel them – the skin adds extra texture and nutrients!

Assembling the Tacos

While the potatoes are baking, take the time to prepare your red cabbage. Simply shred it and squeeze some lime over it for a tangy twist. Once the potatoes are done, it’s time to put everything together.

Recipe Notes and Expert Tips

To ensure your crispy potato tacos turn out perfectly every time, here are some expert tips and notes to keep in mind:

  • Choice of Potatoes: While I’ve used sweet potatoes in this recipe for their natural sweetness and texture, feel free to experiment with different types of potatoes. Yukon gold potatoes or russet potatoes can also make a great choice.
  • Spice It Up: If you love a bit more heat, consider adding chili powder or diced chipotle peppers to the sweet potato mix.
  • Chipotle Sauce: If you don’t have chipotle sauce, you can use a blend of tomato sauce and a bit of smoked paprika and cumin or a dash of hot sauce for a similar flavor profile. Chipotles in adobo sauce is also a great alternative.
  • Tortilla Tips: Warm your corn tortillas before assembling the tacos. This makes them more pliable and less likely to break when folding. If you prefer flour tortillas, check out our homemade flour tortillas recipe. It’s delicious and easy! With any leftovers you can make homemade tortilla chips.
  • Add Proteins: For an extra protein kick, consider adding black beans, or scrambled eggs, if you’re not strictly vegan.
  • Creative Toppings: Don’t limit yourself to the suggested toppings. Things like guacamole, avocado sauce, sour cream (or a vegan alternative), shredded cheese (or vegan cheese), and salsa can add more depth to your tacos.
  • Cooking Method: If you don’t want to use the oven, you can also pan-fry or air fry the sweet potatoes until they’re crispy. Check out our Air Fryer Sweet Potato Cubes recipe for detailed instructions.
  • Serving Size: This recipe is easily scalable. You can double or halve the ingredients based on the number of servings you need.
  • Is there a way to make the sweet potatoes even crispier? For extra crispiness, you can increase the oven temperature slightly or leave the sweet potatoes in the oven for a few extra minutes. Just keep an eye on them to avoid burning.
  • Can these tacos be made ahead of time? Yes, you can prepare the sweet potatoes ahead of time and reheat them when ready to serve. However, it’s best to assemble the tacos just before serving to maintain the freshness and texture of the ingredients.
  • Are these tacos vegan? Yes! As written in the recipe card, they are vegan. Make sure you use plant-based alternatives for your toppings to keep them vegan.

How to Store Leftover Potato Tacos

Got some leftovers? No problem! Here’s how you can store them to enjoy later:

  • Separate Components: It’s best to store the sweet potatoes, tortillas, and toppings separately. This way, the tortillas won’t get soggy, and the sweet potatoes maintain their crispiness.
  • Refrigerate: Keep the roasted sweet potatoes and cabbage in an airtight container in the refrigerator. They’ll last for up to 3-4 days.
  • Tortillas Storage: Store the tortillas in their original packaging or in a ziplock bag. They can stay in the pantry if you’ll be using them soon, or in the fridge for longer shelf life.
  • Reviving Leftovers: When you’re ready to enjoy your tacos again, simply reheat the sweet potatoes in the oven, air fryer, or on a skillet to bring back their crispiness. Warm up the tortillas, and assemble your tacos as usual.

What to Serve with Crispy Potato Tacos

Pairing your crispy sweet potato tacos with the right sides and drinks can turn a simple meal into a feast. Here are some ideas to complete your taco night:

Flavorful Sides

A classic side, Cilantro-Lime Rice adds a hearty element to your meal. The flavors of this Mexican rice complement the spices in the tacos beautifully. For added protein and fiber, serve a side of Copycat Chipotle Black Beans or Homemade Refried Beans. They even taste great in the tacos!

Dips and Sauces

Rich and creamy, avocado sauce (or guacamole) is always a hit. The coolness of the avocado balances the spices in the tacos. For something a little spicier,  a fiery salsa roja, salsa taquera, corn salsa, or a refreshing pico de gallo can elevate your taco experience. A dollop of sour cream adds a cool and tangy element. For a vegan option, there are many plant-based alternatives available that work just as well.

Beverages

Flavors like hibiscus, tamarind, or lime Agua Fresca make for a refreshing and authentic Mexican drink. They’re light, sweet, and perfect for balancing the spices in your tacos. On the other hand, a glass of iced tea or homemade lemonade can be very refreshing. Try adding a twist with mint or ginger for an extra zing.
