Prepare Your Baking Space

First things first, preheat your oven to 350°F/175°C and line two baking sheets with parchment paper or a silicone baking mat. This keeps your cookies from sticking. 

Mix the Dry Ingredients

In a small mixing bowl, combine all-purpose flour, salt, and baking powder (not baking soda!). Whisk together and set aside.

This will be your flour mixture, and having it ready will make the process smoother later on.

Create the Lemon Sugar

Take another small bowl and add lemon zest and granulated sugar. Using your fingers, rub the lemon zest and sugar together to infuse the sugar with lemon flavor.

Cream the Butter and Sugar

Using a stand mixer fitted with the paddle attachment (or a hand mixer), beat the room temperature unsalted butter and the lemon sugar until it’s light and fluffy.

Then, beat in vanilla extract, lemon juice, and an egg. On low speed, slowly beat the flour mixture into the butter mixture until it’s fully combined.

And just like magic, your cookie dough will come together, creating that soft texture you’re aiming for.

Shape and Bake the Cookies

Scoop out the cookie dough by the tablespoon, placing it on the prepared baking sheets.

Remember to leave space between them, as they will spread. Gently press down on the dough balls with the palm of your hand, and bake until the cookies are slightly golden brown, approximately 11 – 14 minutes.

Let the cookies cool on the baking sheets for a couple of minutes before transferring them to a wire rack to cool completely. 

Glaze and Set

In a small mixing bowl, whisk together confectioners sugar, lemon zest, and lemon juice until smooth.

Unglazed Cookies

The best way to store leftover cookies is in an airtight container at room temperature.

Place a piece of parchment paper between the layers to prevent them from sticking together. They will stay soft and fresh for up to a week.

Glazed Lemon Cookies

If you’ve already glazed your cookies and want to store them, follow the same guidelines as above.

Make sure the glaze has set completely before placing them in an airtight container or freezing them. The glaze will stay intact, and the cookies will remain delicious.

Freezing Lemon Cookies

If you’ve got more cookies than you can enjoy in the short term, you can freeze these lemon cookies!

Simply place them in a single layer on a baking sheet and freeze until firm. Then, transfer them to a freezer-safe airtight container, separating layers with parchment paper.

They can be frozen for up to three months. When you’re ready to enjoy your frozen cookies, simply let them thaw at room temperature. If you want to warm them up a bit, you can place them in the oven at a low temperature for a few minutes.

They’ll be just as soft and packed with lemon flavor as the day you baked them.

Ingredients

For the cookies:

  • cups all-purpose flour

  • ¾ cup sugar

Instructions
