We must admit to being a little addicted to Brussels sprouts, balsamic Brussels sprouts, or spicy Sriracha Brussels sprouts, we can’t get enough of them!

So when we were looking for a new and tasty appetizer, Brussels sprouts had to be included!

Ingredients you’ll need

You’ll need all the ingredients shown in the photograph below. 

Ingredients needed, butter, salt, pepper, vegan chorizo, tomatoes, mozzarella pearls. olive oil, and Brussels sprouts.

Forget sliders in buns, forget the meat, these are Brussels sprouts sliders and they are oh, so good!

How to make Brussels sprouts sliders with step by step instructions

Making our Brussels sprouts sliders recipe is easy if you follow our simple instructions.

Preheat your oven to 375°F/190°C.

Add your Brussels sprouts halves, olive oil, melted butter, kosher salt, and freshly ground black pepper to a large mixing bowl and toss until fully coated.

Place the Brussels sprouts halves cut side down on a parchment lined baking sheet and roast until they are lightly golden and tender, approximately 18 – 20 minutes.

Toss the Brussels sprouts in melted butter, olive oil, kosher salt, and black pepper. Place the sprouts cut side down o a parchment lined baking sheet.

Roast for approximately 18 – 20 minutes, flipping halfway through.

Remove the Brussels sprouts from the oven and let them cool.

When the sprouts are cool enough to handle, start to assemble your sliders.

Pierce a Brussels sprout half through the outer edge with a skewer, move it near to the bottom end of the skewer, and then add half a slice of vegetarian chorizo, then a mozzarella pearl, then a slice of tomato, and finally, the other half of Brussels sprout,

Repeat until you have completed all the Brussels sprouts sliders, 

Drizzle with balsamic glaze, serve and enjoy!

Recipe notes and expert tips

  • Can’t find vegan chorizo?
    Substitute it with a vegetarian friendly alternative, you can usually find veggie ham, bacon, chicken, or pastrami slices in grocery stores. 
  • Spice them up
    Add some red chili powder or Cayenne pepper to the melted butter mix and toss the sprouts in it for an extra kick!
  • Storage
    Keep in the fridge in an airtight container for up to three dates.

Ingredients

  • 18 Brussels sprouts
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter melted
  • Kosher salt and pepper to taste
  • 4 ounces vegan chorizo
  • 3 ounces mozzarella pearls
  • 8 cherry tomatoes sliced

Instructions

  • Preheat your oven to 375°F/190°C.
  • Add Brussels sprouts, olive oil, butter, salt, and pepper to a mixing bowl and toss until they are fully coated.
    18 Brussels sprouts, 1 tablespoon extra virgin olive oil, 1 tablespoon unsalted butter, Kosher salt and pepper
  • Place the Brussels sprouts on a baking sheet lined with parchment paper, place them cut side down, and roast until they are lightly golden and tender approximately 18 – 20 minutes.
  • Remove the sprouts from the oven and let them cool.
  • When they are cool enough to handle, start to assemble. Pierce a Brussel sprout through the middle of the cut side, then add ½ a slice of vegetarian pastrami, then add a mozzarella pearl, cherry tomato slice, and half a Brussel sprout.
    3 ounces mozzarella pearls, 8 cherry tomatoes, 4 ounces vegan chorizo
  • Repeat until you have used all the ingredients, serve and enjoy!

Notes

Can’t find vegan chorizo?
