Prepare the Cream Cheese Mixture

In a mixing bowl, combine the cream cheese, garlic powder, fresh dill, salt, and pepper. Mix until smooth and well blended.

Place the sliced roasted peppers, chopped dried tomatoes, capers, and basil leaves evenly over the cream cheese layer on each tortilla.

Spread the cream cheese mixture evenly over the tortillas. Top each tortilla with sliced peppers, dried tomatoes, capers, and basil leaves. Roll up each tortilla tightly.

Roll and Wrap

Carefully roll up each tortilla tightly to ensure the filling stays in place. Wrap each rolled tortilla in paper wrap to help them maintain their shape.

Chill and Serve

Place the wrapped tortillas in the fridge and let them cool for at least 20 minutes. This helps to firm up the filling and makes slicing easier.

After chilling, slice the rolled tortillas into pinwheel shapes and serve.

Recipe Notes and Expert Tips

I’ve made this recipe countless times, but it wasn’t always perfect, so here are my top tips for making yours perfect!

  • Cream Cheese Mixture: Ensure your cream cheese is at room temperature before mixing with the garlic powder, dill, salt, and pepper. This makes it easier to spread and blend with the other ingredients.
  • Spread Evenly: When spreading the cream cheese mixture, ensure it reaches the edges of the tortillas. This helps keep the fillings in place and creates a more uniform roll.
  • Tortillas: Use fresh, soft wheat tortillas for the best results. If they’re a bit stiff, briefly warming them can make rolling easier.
  • Cooling Time: Don’t skip the cooling step. Letting the rolled tortillas chill in the fridge for at least 20 minutes helps the filling set and makes slicing much cleaner.
  • Sharp Knife: Use a sharp knife to slice the rolls into pinwheels. A clean cut ensures the pinwheels hold their shape and look appealing.
  • Customization: Feel free to add or substitute ingredients. Spinach, olives, or even shredded carrots can add extra flavor and nutrition.

How to Store Pinwheel Sandwiches

To keep your leftover Pinwheel sandwiches fresh, place them in an airtight container. Arrange the pinwheels in a single layer, and if you need to stack them, use parchment paper between the layers to prevent sticking.

Store the container in the fridge, and your sandwiches will stay fresh and delicious for up to two days. When you’re ready to enjoy them again, simply take them out and serve them chilled.
