Bring a large saucepan of salted water to a boil, then add your pasta (you can use your favorite pasta shape) and cook it according to the package instructions; when cooked, reserve half a cup of pasta water before draining, as you’ll need it later.
While the pasta is cooking, start on the spicy
Heat your olive oil in a skillet over medium heat; when the olive oil is shimmering, add white onion (red onion would work as well) and saute until they have softened and are translucent, be careful not to burn them.
Next, add minced garlic and saute for a minute.
Then, add tomato paste, stir to combine, and cook for 5 minutes; keep frequently stirring to avoid burning.
Now, if you’re using
Next, add your heavy cream, salt, pepper, and red pepper flakes, and stir to combine.
When your pasta sauce is smooth, add in your parmesan cheese, stir to combine, and then add some of the reserved cup of pasta water, a little at a time, until you get your preferred consistency.

Add your cooked pasta to the creamy sauce and the butter, and stir thoroughly to ensure the pasta is coated with the sauce and the butter has melted.
Serve immediately and garnish with either chopped parsley or chopped basil leaves and a sprinkling of vegetarian parmesan cheese.

This is the best pasta dish I have ever Eaten! We followed the recipe v carefully, using shallots & three quarters full-fat french crème fraîche & & a quarter half-fat crème fraîche for the heavy cream. Waoh! sooo worth the calories!!
We’re SO pleased that you loved it and tend to agree, it’s definitely worth each and every calorie!
I tried this recipe, and it was really good, but I have questions I want to ask; how can I reach you?

11/10 incredible. Tastiest pasta ever
Constantly a part of my meal rotation
I reduce red pepper flakes to 0.75tsp (instead of 2tsp) and I omit the butter and vodka. I also add 0.75 cup thick cut Parmesan instead of 0.5 cup. For the oil, I only add enough to cover the bottom of the pan- I have reduced this after my Italian roommate suggested- he also suggested a few of the other alterations I made above
Overall, soo so good. Perfect for reheating as lunch too
It really is good isn’t it! Glad you enjoyed it and totally agree, it’s perfect for leftovers.
