Prepare the Base

Start by mixing the softened butter and sugar in a large bowl using an electric mixer for about 5 minutes until it’s very soft. Make sure your butter is fully softened for a smoother mix.

Then, add in the egg and vanilla, mixing for a few more minutes. Once that’s done, incorporate the flour, baking powder, and salt. Use a wooden spoon or spatula to mix until everything is fully combined.

Prepare the Filling

In another bowl, mix the softened cream cheese, powdered sugar, and vanilla until you get a creamy consistency. To avoid lumps, ensure your cream cheese is at room temperature.

Cover the mixture with plastic wrap and refrigerate it for about an hour.

Bake the Base

Preheat your oven to 180ºC (350°F). Line a baking sheet with parchment paper and roll your dough into a circle, making it about an inch smaller than your desired final size.

Bake for about 15 minutes or until it’s slightly golden. Let the base cool completely before moving on. It’s crucial to cool the base thoroughly to prevent the filling from melting.

Notes

  • Butter: Make sure your butter is softened to room temperature. This will help you get a smooth and creamy base that’s easy to mix.
  • Cream Cheese: Go for full-fat cream cheese for a richer taste and better texture. Trust me, it’s worth it!
  • Fruits: Use fresh, ripe fruits for the best flavor and look. Pick what’s in season or what you love the most.
  • Chill the Filling: Let the cream cheese mixture chill in the fridge for at least an hour. It will firm up nicely and be easier to spread.
  • Cool the Crust: Make sure the crust is completely cool before you add the filling. This prevents it from melting and keeps it crisp.
  • Spread Evenly: Take your time to spread the cream cheese filling evenly over the crust. This way, every bite will have the perfect balance of flavors.
  • Slice Fruits Thinly: Thin, even slices of fruit not only look better but also make the pizza easier to eat.
  • Get Creative: Have fun arranging the fruits! Create patterns or designs to make your Fruit Pizza a real showstopper.
  • Optional Glaze: If you want to add a little extra shine, brush the fruits with a bit of apricot jam mixed with water. It keeps the fruit looking fresh and adds a touch of sweetness.
