Easy Fruit Pizza with Cream Cheese

Ingredients

For the base:

½ cup butter softened
¾ cup sugar
1 teaspoon vanilla extract
1 egg
1 ¼ cups all-purpose flour
¼ teaspoon baking powder
¼ teaspoon salt

For the Filling:

1 cup cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla

Fruits for topping:

4 kiwis sliced
½ cup blueberries
8 strawberries divided
¼ mango sliced
¼ cup grapes divided

Instructions

In a big bowl, mix butter and sugar with an electrical mixer for about 5 minutes until it’s super soft.

Add the egg and vanilla and continue mixing for a few minutes. Add the flour, baking powder and salt and mix well with a wooden spoon or spatula until fully combined.

In another bowl, mix the cream cheese, powdered sugar and vanilla until creamy.

Cover with plastic wrap and refrigerate for about 1 hour.
Preheat the oven to 180ºC (350°F).
Line a baking sheet with paper and roll the dough in a circle (about 1 inch less than the size you expect to have from the pizza). Bake for 15 minutes, or until slightly golden and let it cool completely.
Spread the cream cheese mixture over the crust and layer the fruit from the outside in.
