It’s my go-to for Christmas parties, Thanksgiving spreads, and New Year’s Eve when I want to put something impressive on the table. Leftovers keep in the fridge for up to a week and reheat well, though honestly, there’s rarely any left. You can prep it ahead and pop it in the oven right before guests arrive, making it honestly one of the easiest things you’ll ever serve at a party.

How to Make Baked Brie with Step-By-Step Instruction

If you’ve never made baked brie before, you’re going to love how simple and rewarding this easy baked brie recipe is.

Preheat Oven

Start by preheating the oven to 350°F/180°C, so it’s fully ready and evenly hot inside when the brie goes in. An oven thermometer helps make sure your oven’s at the right temperature.

Prep the Brie

Unwrap the wheel of brie cheese and place it back into the lower part of the wooden box it came in.

Use a sharp chef’s knife to score the brie on top with shallow slits across, spacing them about every ½ inch. Those cuts help the heat penetrate the rind and let the inside get beautifully soft all the way through.

Bake Until Soft

Place the brie cheese on a baking sheet with parchment paper in the preheated oven and bake for about 15 to 20 minutes. Watch the baking time closely because ovens vary.

You’ll know it’s ready when it looks slightly puffed, feels very soft when you gently press the top, and the inside is completely melted.

Add Toppings

Wearing your oven mitts, remove the round brie cheese from the oven and carefully transfer it, still in the wooden box, from the sheet pan to a wide pie plate, serving dish, or serving platter. An oval serving platter makes this appetizer look more presentable.

Drizzle honey or maple syrup over the top of the brie, scatter the chopped walnuts, and finish with a sprig of fresh thyme. You can also use hot honey if you like a little heat, or add other nuts like chopped pecans and fresh herbs like fresh rosemary if desired.

Serve Warm

Serve immediately alongside crostini, bruschetta, sliced baguette, French bread, crackers, grapes, or apple slices.

It also holds up well for up to a week, stored covered in the fridge, and can be reheated gently in the oven. Serve it straight from the box with crostini, crackers, or apple slices and watch it vanish before anything else on the table.

Ingredients

  • 8 ounce Brie in a round
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons walnuts chopped
  • Thyme sprig to garnish

For serving

  • Crostini, bruschetta, French bread, or crackers

Instructions

  • Preheat your oven to 350°F/180°C
  • Remove the brie from its wrapper and return it to the lower part of wooden box that it came in. Make shallow slits in the top of the brie, every ½ inches. Place in the oven and bake until very soft, approximately 15 – 20 minutes

  • Remove from the oven and place on a serving plate (leave it in the box), drizzle honey, scatter walnuts and garnish with a sprig of fresh thyme. Serve immediately and enjoy!

Notes

Here are a few tips I’ve picked up from making baked brie many times:
Keep the wooden box intact: The wooden box isn’t just for presentation. It holds the brie together while it bakes and makes transferring to a serving plate a lot easier without the cheese collapsing.
Score deeply enough: Make sure your slits go through the rind so the heat can fully penetrate and the inside gets completely melty rather than just warm around the edges.
Watch the bake time: Ovens vary, so start checking at 15 minutes by gently pressing the top. It should feel very soft with a little give. If it still feels firm, give it another 3 to 5 minutes.
Add toppings right after baking: Drizzle the honey and scatter the walnuts as soon as the brie comes out of the oven so the warmth of the cheese slightly toasts the nuts and helps the honey sink in.
Serve immediately: Baked brie is best the moment it comes out of the oven, while the inside is still fully melted. Have your bread, crackers, and fruit ready to go before it goes into the oven.
Store properly and reheat gently: If you have leftovers, let them cool completely and store them covered in the fridge for up to a week. Reheat in the oven at 300°F for 8 to 10 minutes rather than microwaving, which can make the rind rubbery and the cheese unevenly melted.

How to Store Leftovers

If you happen to have leftover baked brie, let it cool completely to room temp before storing. Transfer it to an airtight container like a pie carrier or a small baking dish with a tight lid, or wrap it tightly and keep it in the refrigerator for up to a week.

I wouldn’t recommend freezing brie as the texture becomes grainy and watery once thawed. To reheat, warm the brie in the oven at 300°F for about 8 to 10 minutes until the melted cheese is soft and gooey again.

What to Serve With Baked Brie

It’s practically made for dipping, so load up a board with crostini, sliced French bread, bruschetta, baguette slices, or your favorite crackers. The contrast of the crispy, crunchy bread against the warm, soft, melted brie is a big part of what makes every bite so satisfying.
