In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set it aside while you work on the wet ingredients.

In a large bowl, cream the butter, Biscoff cookie butter, and sugar until light and fluffy.

Portion the Cookie Dough

Scoop the dough into golf ball-sized portions. An ice cream scoop keeps every cookie the same size so they air fry evenly and pair up perfectly as sandwiches.

Air Fry the Cookies

Line your air fryer basket, then place the dough balls in batches, leaving space between each one. Parchment paper makes cleanup a breeze and keeps the cookies from sticking.

Air fry at 350°F (180°C) for 6–7 minutes. Let the cookies cool in the basket before transferring them to a wire rack to cool completely.

Make the Filling

In a large bowl, beat the butter and Biscoff cookie butter together until creamy. Add the powdered sugar and crushed Biscoff cookies and mix until the filling is smooth and fluffy.

Assemble the Sandwich Cookies

Spread or pipe the filling onto the flat side of one cookie for cleaner, more even sandwiches. I love using a piping bag for more control and a bakery-perfect finish.

Air Fryer Biscoff Sandwich Cookies are my favorite thing to make when I want something showstopping that tastes even better than it looks. The air fryer gets each batch done fast, perfect for busy days and without heating up the whole kitchen. The cookie dough is packed with smooth Biscoff cookie butter and crushed Biscoff cookies, giving every bite that signature warm, caramelized spice flavor. The filling is thick, fluffy, and just as good as the cookies themselves, loaded with even more cookie butter and crushed cookies. I love making them for holiday cookie exchanges, bake sales, and gifting because they always get noticed.

Ingredients

For the Cookies:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter slightly cold

  • 1 cup sugar
  • 2 cold eggs
  • 1 teaspoon vanilla extract
  • ¼ cup Biscoff cookies finely crushed

  • 2 cups powdered sugar

Instructions

Notes

Here are a few tips I’ve picked up from making these more than once:
  • Use slightly cold butter: Slightly cold butter (not fully softened) helps the cookies hold their shape in the air fryer, preventing them from spreading too flat.
  • Crush the cookies finely: Make sure the Biscoff cookies are crushed into fine crumbs, not chunky pieces, so they blend smoothly into both the dough and the filling without affecting the texture.
  • Don’t overmix the dough: Mix the dry ingredients in until just combined. Overmixing can make the cookies tough instead of soft and tender.
  • Cool completely before filling: The cookies need to be fully cooled before you add the filling, otherwise the butter-based filling will melt and slide right off.
  • Match your cookies by size: Pair up similar-sized cookies before you start filling so every sandwich looks even and holds together well.
  • Flash-freeze before storing: If you’re making a big batch, freeze the assembled cookies on a baking sheet for about an hour before transferring them to a container so the filling sets, and they don’t stick together.

How to Store Leftovers

Store the cookies in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. The filling holds up well chilled, and the cookies actually taste great cold straight from the fridge.

To freeze, place the assembled sandwich cookies in a single layer on a baking sheet and freeze until solid, then transfer to a freezer-safe container with parchment between the layers. They’ll keep in the freezer for up to 2 months. Thaw at room temperature for about 30 minutes before serving.
