We love to make this easy baked goat cheese recipe when we want a substantial lunch or a light supper, it’s so good with crusty bread dipped into it and when people are eating it, a satisfying silence fills the room.

What tomatoes should I use?
We’ve used cherry tomatoes in this goat cheese recipe because they are readily available, but you could substitute them with any of the following tomato varieties.
Baby plum tomatoes, Capri tomatoes, piccobella tomatoes, sugarbelle tomatoes, or mini San Marzano tomatoes
Does goat cheese melt in the oven?
Goat cheese softens, rather than melts.
It’s different from the way that cows cheese melts, but it does become soft and gooey,

We love nothing better than to eat this delicious baked soft goat cheese and tomato dish with a chunk of crusty bread.
You could also have a light green salad with it or a bowl of sweet potato fries.

Can I make these ahead?
Yes, you can.
Follow the recipe up to the part where you place the dishes in the oven, instead, place them in the fridge for up to 24 hours.
When you are ready to cook, either take them out of the fridge an hour before you put them in the oven or add an extra 5 – 10 minutes to the cooking time.
Can I freeze it?
We don’t recommend freezing this tomato and baked goat cheese recipe, it doesn’t freeze well.
It takes so little time to prepare it, you can easily prepare it when you need it.

The only ingredient that is not vegan friendly is goat cheese, so simply substitute it for vegan goat cheese. - Don’t have individual ovenproof dishes?

How to make baked goat cheese recipe with step-by-step instructions
Making our baked goats cheese recipe is easy if you follow our simple instructions.

Preheat your oven to 190°C/375°F.
In a pan over medium heat, add olive oil, garlic, red onion, and cook until the onion is translucent.
Add your red pepper flakes, dried basil, dried oregano, smoked sea salt, and cook for 1 – 2 minutes, stirring to ensure nothing sticks.
Now, add in your cherry tomatoes, stirring to evenly coat with the spices, and cook for a further 1 – 2 minutes.
Next, equally, transfer the tomato mixture into four ovenproof dishes, then add your goat’s cheese in between the tomatoes.
Place in the oven and bake for 25-30 minutes.
Remove from the oven, let them cool for a couple of minutes, and then serve with crusty bread (optional).
