One air fryer, fresh ingredients, and a silky green soup in no time. Here’s exactly how to make mint pea soup in your air fryer.

Soften the Onion in the Air Fryer

Add the olive oil and chopped onion in an oven-safe bowl, then pop it into the air fryer. Bake at 180°C (350°F) for 7 minutes, stirring regularly so the onion cooks evenly and stays golden, not burnt.

Add the Garlic

When the onion is soft, stir in the minced garlic and air fry for just 1 minute. Watch carefully because garlic can go from golden to brown in no time. Soon, a delicious savory aroma will fill the air fryer.

Add the Peas, Stock, and Lime

Now add peas along with the vegetable stock and refreshing lime juice. Season generously with salt and pepper, combine everything, and bake for another 5 minutes.

The peas will cook through quickly and the stock will start to warm and absorb all those garlic and onion flavors. I like using this good quality liquid measuring cup because it makes pouring the stock cleanly so much easier without spillage.

Add the Mint and Blend Until Smooth

Remove the bowl from the air fryer and add in the chopped fresh mint leaves. Carefully transfer everything into a blender and process on high until completely smooth and silky. A professional-grade blender gives you an ultra-smooth, restaurant-quality texture rather than a slightly grainy result.

If you’re using an immersion blender, blend for a bit longer to make sure you get a consistently smooth finish. Take a moment to taste and adjust seasonings before serving.

Serve With Bread

Ladle the soup into bowls and serve alongside slices of crusty bread for dipping. A bread knife with a serrated blade makes slicing through a fresh loaf cleanly without crushing it. The bright green color of the soup looks incredible in the bowl, and the mint and lime keep it tasting fresh and vibrant right to the last spoonful. Serve and ejoy!

Notes

Here are my best tips for making Air Fryer Pea and Mint Soup turn out perfectly every time.
  • Stir the onion regularly: The air fryer heats quickly, so the onion edges can burn if unattended. Stir every 2 minutes in the first step to keep them evenly golden, not scorched.
  • Watch the garlic closely: Garlic only needs one minute at 180°C. Any longer and it will turn bitter, affecting the soup. Set a timer and remove the tray as soon as it smells fragrant.
  • Use frozen peas straight from the freezer: No need to thaw. Add frozen peas straight to the hot stock; they’ll cook in 5 minutes and help keep the soup bright and vibrant once blended.
  • Add mint only after cooking: Stirring the mint off the heat preserves its fresh, bright flavor and vivid green color. Heating it too soon quickly destroys the delicate oils, so timing is key.
  • Adjust the lime to taste: The juice of one lime is a guideline, not a rule. Taste the soup and add more for extra brightness, or use less if your lime is especially sharp.
  • Freeze flat for easy storage: Pour the cooled soup into zip-lock freezer bags, seal, and lay flat on a baking sheet to freeze. Once solid, stand the bags upright to save space, and they thaw much faster than a bulky container.

How to Store Leftovers

Let the soup cool slightly before storing, then transfer it into an airtight glass food storage container and keep it in the fridge for up to 3 days. Reheat gently on the stovetop over medium heat, stirring occasionally, and add a small splash of vegetable stock or water if it’s thickened up too much in the fridge.

For longer storage, freeze the soup in individual portions using these souper cubes for up to 3 months. Thaw overnight in the fridge and reheat gently on the stovetop. The texture holds up well after freezing thanks to the smooth blended consistency, so it tastes just as fresh and vibrant the second time around.

What to Serve With Air Fryer Pea and Mint Soup

Crusty bread is the perfect choice here. Whether it’s a thick slice of sourdough, a warm baguette, slices of French bread, or toasted white bread rubbed with a little olive oil, you want something sturdy enough to hold up to dipping without falling apart in the bowl.

If you want to turn the soup into something more substantial, serve it alongside a simple green salad or a grilled cheese sandwich. A lightly dressed salad of cucumber, lemon, and herbs complements the fresh flavor profile without competing with it, and grilled cheese adds richness and comfort that makes the whole meal feel a little more satisfying.
