How to Make Lucky Charm Rice Krispy Treats with Step-By-Step Instructions

You’ll have these colorful, no-bake desserts ready in just a few minutes with simple stovetop melting and mixing.

Prepare the Baking Dish

Line a 13 × 9-inch baking pan or dish with plastic wrap and lightly grease with nonstick cooking spray. This helps prevent sticking and keeps cleanup simple.

Melt the Butter

Place a large pot over medium heat and add the unsalted butter. Stir until completely melted. I like using a heavy-bottomed saucepan because it distributes heat evenly and prevents hot spots that could burn the marshmallows.

Add the Marshmallows

Add the gooey marshmallows and a pinch of salt. The salt balances the sweetness and brings out the marshmallow flavor, so don’t skip it.

Stir continuously with a rubber spatula, scraping the sides and bottom of the pot to prevent burning. A silicone spatula works perfectly for this since marshmallow mixture won’t stick to it.

Once the marshmallows are fully melted and smooth, remove the pot from the heat immediately. Overheating makes the mixture tough and chewy instead of soft and gooey.

Fold in the Cereal

Gently fold in the Lucky Charms cereal until evenly coated with the marshmallow mixture. Work quickly before the melted marshmallow starts to set, but not aggressively that you start to crush the cereal pieces.

You want them just evenly distributed but still intact as much as possible.

Press Into the Pan

Transfer the cereal mixture to the prepared pan or baking dish and spread evenly. Lightly press it into an even layer using your spatula or lightly greased hands. Do not press too firmly. Heavy pressing makes dense, hard treats instead of light and fluffy ones.

Using a piece of parchment paper over the top while pressing helps create an even surface without sticking to your hands.

Gently press the mixture into the baking dish using a spatula or parchment paper to create an even layer, being careful not to pack it too firmly to keep the treats light and fluffy.

Chill and Cut

Refrigerate for at least 20 minutes, or until set. Cut evenly into 12 squares with a sharp chef’s knife sprayed with cooking spray to make clean cuts without pulling or tearing.

Notes

I’ve made these treats dozens of times, and these tips help you get perfect results every time.
Use fresh marshmallows: Stale marshmallows won’t melt smoothly and create a grainy texture instead of gooey and stretchy.
Don’t overheat the mixture: Remove the pot from heat as soon as the marshmallows are fully melted because overheating makes the treats hard and chewy instead of soft.
Work quickly: The marshmallow mixture starts to set as it cools, so fold in the cereal and press into the pan right away for even distribution.
Grease your hands lightly: Spray your hands with cooking spray before pressing the mixture into the pan so it won’t stick to your fingers.
Cut with a greased knife: Spray your knife with cooking spray between cuts to get clean edges without the treats sticking or tearing.
Flash-freeze for clean storage: Freeze the cut treats on a baking sheet for 30 minutes before transferring to containers so they don’t stick together in storage. Keep them in an airtight container at room temp for up to 3 days or in the freezer for up to 3 months.

How to Store Leftovers

Keep them in an airtight container at room temperature for up to 3 days. Store them in a single layer, or if you need to stack them, place a piece of parchment between each layer. They stay soft and gooey when stored properly, but exposure to air will make them hard and stale.

For longer storage, flash-freeze them on a freezer-safe sheet pan for about 30 minutes, then transfer them to a freezer container or resealable bag for up to 3 months. Using freezer-safe containers with tight seals prevents freezer burn and keeps them tasting fresh.

Let frozen treats sit at room temperature for about 10 minutes before serving so they soften slightly and the marshmallow returns to that perfect stretchy texture.
