Cranberry Brie Bites

Cranberry Brie Bites are my go-to party appetizer every single time. The crescent dough bakes up flaky and golden while brie melts into creamy perfection inside. Tart cranberry sauce and crunchy walnuts balance out the creamy brie perfectly and make each bite feel fancy. Fresh rosemary brings everything together with that perfect holiday aroma you can’t resist.

I make these for Thanksgiving appetizers, Christmas gatherings, dinner parties, potlucks, and anytime I need something fancy-looking that’s actually easy. They’re great for entertaining because you can prep them ahead and just pop them in the oven when guests show up. Leftovers keep in the fridge for up to 3 days and taste just as good reheated.

How to Make Cranberry Brie Bites with Step-By-Step Instructions

You’ll have warm, cheesy appetizers ready to serve in just three easy steps.

Prep the Dough and Pan

Preheat your oven to 375°F/190°C. Spray your muffin tin with cooking spray so nothing sticks, and set it aside.

Lightly flour your work surface and roll the crescent dough sheet out using a rolling pin. Cut your dough into 24 squares of equal size, then place the squares into the prepared mini muffin tin wells.

Fill the Cups

Cut your brie into small pieces and place them inside the dough squares. Add a generous teaspoon of cranberry sauce, chopped walnuts, and a small sprig of fresh rosemary. The brie will melt down and combine with the cranberry sauce as it bakes.

Bake Until Golden

Place in your oven and bake for approximately 15 minutes, until the crescent dough is lightly golden brown and the cheese is bubbling. Remove from the oven and transfer them to a serving platter so your guests can grab them easily while the cheese is still gooey.

Serve them while still warm, and enjoy!

If you’re bringing these to a party or potluck, transport them in a single layer in a covered dish or hard-sided containers to keep the pastry from getting crushed. They travel best when slightly cooled so the cheese sets a bit, making them easier to handle.

If you want to keep them warm until serving time, packing the containers in an insulated carrier should do the trick.

Cranberry Brie Bites are my favorite holiday appetizer when I want something that looks fancy but comes together fast. Flaky crescent dough, creamy brie, tart cranberry sauce, crunchy walnuts, and fresh rosemary bake up golden and bubbly. I make them for Thanksgiving, Christmas parties, and pretty much any time I'm hosting because they always get devoured. That mix of sweet, savory, and creamy is just so good together. They keep in the fridge for up to 3 days and taste great reheated.

Notes

I’ve got a few helpful tips to make your Cranberry Brie Bites turn out perfectly every time.
Cut uniform squares: Use a pizza cutter or sharp knife to cut the crescent dough into equal squares so they bake evenly and fit nicely in the muffin tin wells.
Don’t overfill the cups: A generous teaspoon of cranberry sauce is plenty because it’ll bubble up as the brie melts, and too much filling can cause overflow.
Use cold brie: Cold brie from the fridge is easier to cut into small squares without getting messy or sticky on your knife.
Watch the baking time: Check them at 12 minutes to avoid over-browning the crescent dough since ovens vary and you want them golden, not dark.
Let them cool slightly: Give them 2-3 minutes to cool in the pan after baking so the cheese sets just enough to make them easier to remove without falling apart.
Flash-freeze for storage: Freeze baked bites on a baking sheet for 1 hour before refrigerating in airtight containers for up to 3 days or freezing for up to 3 months, so they don’t stick together. Thaw in the refrigerator overnight, and reheat in the oven or air fryer.

How to Store Leftovers

Store leftover Cranberry Brie Bites in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or air fryer to crisp up the crescent dough and melt the cheese again. Avoid using the microwave as that can make them soggy.

For longer storage, flash-freeze them on a freezer-safe sheet pan for about 1 hour, so they don’t stick together when you store or stack them. Once frozen, place and keep them in a freezer-safe container for up to 3 months.

Thaw in the fridge overnight and reheat in the oven until warmed through. The pastry might lose a bit of crispness after freezing, but they’ll still taste delicious.

What to Serve With Cranberry Brie Bites

Serve them alongside other holiday appetizers like stuffed mushrooms, spinach artichoke dip with crackers, or a cheese board with grapes and nuts.
