The perfect non alcoholic refreshing summer mocktail
As much as most people enjoy cocktails that have alcohol in them, it’s always good to have a non alcoholic version to offer your guests.
This is where our fresh cucumber Tom Collins mocktail is a delicious option to serve on a warm night and our version is without the gin.
Deliciously refreshing, your guests will know you’ve gone the extra mile by making such a special alcohol free summer sparkling drink for them.
As mocktail recipes go, this is a really simple easy one to make!
Where does this cocktail come from?
Our Tom Collins mocktail is unsurprisingly comes from the alcoholic version with gin.
There are a few versions of how the classic Tom Collins cocktail got its name, one is that there was a big hoax back in 1874 which saw people searching for an imaginary Tom Collins.
Other versions say that a bartender called Jerry Thomas was the first to write about this recipe in 1876.
However this drink got its name, we’re glad that it was developed!
What equipment do I need to make it?
For our recipe you’ll need a blender to make this tasty Tom Collins mocktail.
We’d recommend a cocktail shaker but if you haven’t got one then that’s fine, you can just give it a good stir!
You’ll need is a Tom Collins glass and something to stir your drink with and that’s it – nice and easy!
What are the ingredients?
There’s not many ingredients in our recipe that are needed to make our Tom Collins mocktail drink.
You’ll need a half a cucumber, a lemon, club soda water and ice. That’s all.
We don’t use simple syrup in our recipe but if you like your drinks sweet, then you could add it in.
How is it different from the alcohol version?
The classic alcohol based Tom Collins recipe has gin, lemon juice, sugar syrup (simple syrup) and club soda water in it.
We replace the gin and the sugar syrup (simple syrup) with cucumber juice.
So while our non alcoholic drink has elements of the classic cocktail, it is a more refreshing cucumber and lemon delicious tasting drink!
Is it vegan?
Yes, this drink recipe is vegan but we always advise you to double-check the ingredients listing on any of your shop-bought bottles as not all manufacturers are the same.
What glass should I serve it in?
We recommend that you serve it in a Collins glass which is a tall glass.
If you don’t have a Collins glass then a highball tall glass would be absolutely fine to serve it in too.
Is it suitable for children?
Absolutely, it’s very child friendly!
How do I make it?
First, you’ll need to peel your cucumber half and then place it into your blender.
Blitz it until it’s a nice smooth puree consistency, it’ll already be smelling great.
Place ice in your glass.
Then pour the puree into a cocktail shaker and add in your freshly squeezed lemon juice from a whole lemon.
Give the mix a good shake.
Pour the mix over your ice and then fill the glass with sparkling club soda water.
Garnish your mocktail and enjoy your drinks!
This is a drink without alcohol that everyone will want to taste!
What do I garnish it with?
Tom Collins mocktails are always best served with garnish.
Tip: When you peel your cucumber, save some of the peelings to use.
You can also get creative with lemon peel.
You can also use a slice of cucumber on the side of your glass, or you may prefer a slice of fresh lemon.

- First, you'll need to peel your cucumber half, chop it into chunks and place it into your blender and blitz it until it's a nice smooth puree consistency, it'll already be smelling great
- Place ice in your glass
- Then pour the puree into a cocktail shaker
- Squeeze the juice from your lemon and add to your cocktail shaker and shake
- Pour the mix over your ice and then fill the glass with sparkling club soda water
- Garnish your mocktail with cucumber ribbons or a slice of lemon
- A super summer drink and enjoy!
