Ready to get those noodles dancing in the pan? Here’s how to make your Spicy Udon Noodles, step by step:

Cook the Udon Noodles

Boil your udon noodles in a large pot of water according to the package instructions. Once they’re done, drain them and then dunk them in cold water to stop the cooking process. This keeps them perfectly chewy.

Prepare the Sauce

In a small bowl, mix together the soy sauce, water, hoisin (or oyster sauce), minced garlic, minced ginger, sugar, and cornstarch. This is all your flavor, so make sure it’s well combined.

Heat Things Up

Heat your wok (or a large skillet) over medium-high heat and add the sesame oil. Wait until it’s sizzling, then toss in the green onions, red chilis, green beans, carrots, and peanuts.

Stir-fry these for about 5 minutes until they’re just tender but still have a bit of crunch.

Bring It All Together

Add the drained noodles to the wok, pour over the sauce, and toss everything together. Keep stirring until the noodles are well coated and the sauce thickens up, about 5 more minutes.

Notes

  • Other Noodles: Other noodles like ramen noodles, soba noodles, rice noodles, and even spaghetti work well with this recipe too.
  • Sesame Oil: Use toasted sesame oil for a deeper flavor. Its nutty aroma is irreplaceable and elevates the whole dish.
  • Spice: If you love heat, go bold with extra red chili flakes or even a splash of chili oil or a spoonful of gochujang. For a milder version, reduce the number of fresh chilies.
  • Crunch: For added texture, throw in some extra chopped peanuts right before serving. This gives an enjoyable crunch with every bite.
  • Vegetables: Feel free to toss in other vegetables like mushrooms, cabbage, broccoli, or bell peppers for more color and crunch.
  • Protein: Add chicken, shrimp, or tofu to the noodles for an extra dose of protein, making it a more filling meal.
  • Cooking the Noodles: Ensure not to overcook the udon noodles to maintain their unique chewiness.
  • Adjusting Thickness: If the sauce thickens too much, add a little water or broth to reach your desired consistency.
  • Vegan: The basic recipe can be easily made vegan by ensuring your sauces like hoisin and soy sauce are vegan-friendly. Check labels carefully!

How to Store Leftover Noodles

  • Cool and Airtight: Let the noodles cool to room temperature before you pack them away, and use an airtight container to store them.
  • Refrigerate: For the best flavor and texture, pop the leftovers in the fridge, and eat them within three to four days.
  • Reheat: When you’re ready to reheat, splash a little water or additional sesame oil over the noodles to keep them moist. Pop them in the microwave or reheat on the stove over medium heat.
