We love fresh strawberries, they really are the taste of summer and we eat as many as we can while they are in season!

They are so versatile and we love to make strawberry puree for our cocktails with them.

Simple strawberry puree – one ingredient and ready in just 5 minutes

Learning how to make strawberry puree is incredibly easy.

It’s a process that will take you 5 minutes, seriously, just 5 minutes and you’ll be enjoying homemade puree.

Fresh or frozen strawberries?

You can use fresh or frozen strawberries for different things.

Fresh strawberries make the most perfect homemade strawberry puree full of fresh strawberry flavor.

What to do with pureed strawberries

You can use your homemade puree for drinks.

It’s great for using in cocktails like our strawberry martini, strawberry vodka lemonade and strawberry daiquiri.

Strawberry puree can also be used in smoothies, cakes and desserts.

Can you buy strawberry puree?

Yes, you can most certainly buy strawberry puree but when this is such an easy strawberry puree recipe, why would you?

Of course strawberries are not always in season, so plan ahead, make strawberry puree in batches and freeze it.

Do I need a food processor or blender?

A blender or food processor makes light work of the task when you are looking to make strawberry puree, so we definitely recommend using one.

Not everyone has one though, so it’s good to know that you can make homemade strawberry puree without a food processor or blender but it’ll take longer.

Simply hull your strawberries and then use a masher or even a fork.

Is strawberry puree the same as strawberry jam?

The difference between strawberry puree and strawberry jam is that puree is not cooked and we don’t add any sugar to it.

This means that homemade puree doesn’t keep fresh as long but don’t forget that you can easily freeze it.

What is reduced strawberry puree?

Reduced strawberry puree is a thicker version of strawberry puree.

You’d use reduced strawberry puree in baking and is delicious poured over ice cream.

How to make reduced strawberry puree

Reduced strawberry puree is easy to make, it just takes a little longer.

First, you need to put your strawberries in a saucepan, then add lemon zest, sugar and a little salt.

Now turn the heat to medium-high until they start to simmer.

Then reduce the heat to low and let the strawberries start to reduce, this usually takes around 15 minutes, you’ll need to keep an eye on them and give them a stir occasionally as you don’t want them to burn as the sauce thickens.

When the finished puree is ready, it should look like strawberry sauce.

What does a bad strawberry look like?

You can usually tell if a strawberry is bad. If it’s got mold on, all shrivelled up or all mushy then it’s bad.

If it’s got green or white on it, this means that it was picked before it ripened, so give it a miss, you want perfectly ripe ones for this strawberry puree recipe.

How do I store it?

Once you know how to make strawberry puree, you’ll want to take advantage of fresh strawberries in season.

Fresh puree will keep covered in the fridge for between 3 – 5 days.

It also freezes well and you can freeze your puree for 6 months.

We buy our strawberries when they are season and big batch puree them and then separate them into portion size and put them in an airtight freezer bag.

You can even freeze leftover puree in flexible ice cube trays, giving you small portions whenever you need them.

Simply fill up the ice cube trays with puree and once fully frozen, pop the strawberry blocks out and store them in the freezer in freezer bags or an airtight container.

Then in winter, we have our own supply of fresh strawberry puree.

Recipe notes and tips

  • Strawberry picking is a lot of fun and your strawberry puree will taste amazing if made from freshly picked strawberries.
  • Frozen strawberry puree makes a great ingredient for frozen cocktails, simply put it in the blender or food processor frozen, along with the rest of your ingredients.
  • Have fresh strawberry sauce anytime of the year by freezing your strawberry puree in ice cube trays.

How to make strawberry puree for drinks

This strawberry puree recipe is super simple and takes just 5 minutes.

The first job to do is to wash your fresh strawberries and then hull them.

Essentially, hulling a strawberry means removing the stem but also a tiny bit of the inside of the strawberry where the stem has come from.

Then put all of the strawberries into your blender or food processor and blitz them until all of the strawberries are a smooth consistency.
