I love how easy this Pillsbury cinnamon roll casserole is to make, just follow my simple instructions and you’ll be enjoying it in no time. I’ve deliberately made this an easy recipe, but if you prefer homemade, then try this cinnamon rolls recipe.

Prep your baking dish

Start by preheating your oven to 180°C (350°F).

Grab a 9×13-inch baking dish and generously grease it with melted butter. I use this silicone pastry brush because it makes it so much easier to coat the corners and sides without making a mess. This keeps everything from sticking and adds an extra touch of richness to the casserole.

Cut and arrange the cinnamon rolls

Take your frozen cinnamon rolls and cut each one in half. A small serrated utility knife works well here—less squishing, more clean cuts.

If they’re on the larger side, quarter them instead. Arrange these pieces evenly in the greased baking dish so they’re ready to soak up the egg mixture.

Whisk up the egg mixture

In a medium bowl, whisk together the eggs, milk, vanilla, and cinnamon. I usually reach for my mixing bowl with a grip and spout because it makes pouring the mixture over the rolls way easier (and neater).

Keep going until it’s smooth and well-blended—this will coat the cinnamon rolls and give them that soft, custardy texture.

Combine everything

Slowly pour the egg mixture over the cinnamon rolls, making sure to cover them evenly. Let it sit for a few minutes so the rolls soak up all that goodness.

At this point, you can pop it in the fridge overnight if you’re prepping ahead, or move straight to the baking stage.

Bake to golden perfection

Slide the dish into the oven and bake for 20-25 minutes. Keep an eye on it—once the rolls are golden brown and puffed up, you’re good to go. Your kitchen will smell incredible!

Finish with icing and maple syrup

Let the casserole cool for about 5 minutes. Then drizzle the icing from the cinnamon roll package over the top and finish with a generous pour of pure maple syrup. This final touch takes the casserole from delicious to downright irresistible.

If you’re bringing this casserole to a holiday brunch or potluck, this insulated casserole carrier has been a game-changer. It keeps everything warm on the go, and I don’t have to stress about reheating or spills in the car.

Instructions

  • Preheat your oven to 350°F (180°C). Grease a 9×13-inch baking dish with melted butter to ensure the casserole doesn’t stick.
    4 tablespoons butter
  • Cut each frozen cinnamon roll in half (or quarters if they’re larger) and arrange the pieces evenly in the prepared dish.
    8 frozen cinnamon rolls
  • In a medium-sized bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until the mixture is smooth and well combined.
4 large eggs, ½ cup milk, 2 teaspoons vanilla, 2 teaspoons cinnamon
  • Pour the egg mixture evenly over the cinnamon rolls, ensuring each piece is coated. Let it sit for 25 minutes to soak in. If desired, cover the dish and refrigerate it overnight for baking the next day, or bake when soaked.
  • Place the dish in the preheated oven and bake for 20-25 minutes, or until the cinnamon rolls are golden brown and puffed.
  • Allow the casserole to cool slightly for about 5 minutes. Drizzle the icing from the cinnamon roll package over the top, then finish with a generous layer of maple syrup. Serve warm and enjoy!

Notes

  • Let the rolls soften: If your frozen cinnamon rolls are rock hard, let them sit at room temperature for 5-10 minutes to make cutting easier.
  • Overnight option: Refrigerating overnight allows the egg mixture to fully soak into the rolls, giving you a creamier texture.
  • Pour carefully: Pour the egg mixture evenly over the rolls to ensure every piece gets soaked. Missing spots can leave parts dry.
  • Check for doneness: Use a toothpick to check the center. If it comes out clean or with a few crumbs, it’s ready to come out of the oven.
  • Maple syrup matters: Stick with pure maple syrup for the best flavor—it makes a big difference.
  • Adjust the cinnamon: If you love bold cinnamon flavor, don’t be afraid to add an extra sprinkle!

How to Store Leftover Cinnamon Roll Casserole

Got leftovers? No problem! Transfer the casserole to an airtight container and store it in the fridge for up to three days. I like using these stackable glass containers so I can portion it out and just grab one to reheat for breakfast later in the week.

To reheat, pop a portion in the microwave for about 30 seconds or warm it in the oven at 350°F for a few minutes.

You can also freeze this sweet breakfast casserole. Allow the casserole to cool completely, then slice it into portions for easy reheating later.

Wrap each piece tightly in plastic wrap or aluminum foil and place them in an airtight container or freezer bag. It will keep in the freezer for up to two months.

To enjoy later, thaw in the fridge overnight and reheat in the oven at 350°F until warmed through. You can also microwave individual portions for a quicker option!
