This dish is not only a crowd-pleaser for family gatherings or special brunches like Christmas morning, but it’s also simple enough to whip up for a hearty weekend breakfast. Its combination of fresh ingredients and cheesy goodness makes it an absolutely delicious way to start your day.

1. Start by preheating your oven to 180ºC (356ºF).

2. Then, in a non-stick skillet, heat the olive oil over medium heat. Add the sliced bell peppers and sauté them for about 7-10 minutes, or until they start to soften.

3. Next, add the shredded hash browns to the skillet and continue cooking for another 7-10 minutes. This step is crucial for getting those hash brown potatoes nicely browned and crispy.

4. Once your fresh potatoes and peppers are cooked, transfer them to a large bowl. Crack the eggs into the bowl with the potato and pepper mixture, breaking them up as you stir everything together.
