1. Preheat your oven to 400°F/205°C. Line a baking sheet with parchment paper and set it aside.

2. First, elevate your mushrooms with a crispy touch. Thinly slice shallots, sauté in oil until golden ribbons form, around 6-7 minutes. Once golden, drain on paper towels.

MAKE THE GARNISH

3. Let’s give our mushrooms a gentle wipe-down using a damp paper towel. Remove the stems from your mushrooms and chop them finely.

PREP THE MUSHROOMS

4. In a medium skillet, heat some olive oil over medium heat and toss in the chopped mushroom stems. Let them get nice and tender – this should take about 4-5 minutes. Then, add some minced garlic for that extra flavor kick.

COOK

5. Add cream cheese, Parmesan, parsley, thyme, lemon zest, and salt to a small bowl. Mix until everything is incorporated. Then, mix in the mushroom stems.
