1. Divide the strawberries in half and set aside. Place one half in a food processor or blender and purée. For easier cleanup, we like to use an immersion blender straight in the pot we’ll be cooking in.
2. Transfer the blended fresh strawberries to a medium pot and add the cornstarch, sugar, lemon juice, lemon zest, and vanilla extract. Heat over medium-high heat and bring it to a boil.
3. Remove the pot from the heat and add the remaining strawberries; stir with a wooden spoon to combine and taste; adjust the lemon or sugar if desired.
4. The sauce thickens as it cools. Allow it to cool completely before using. When ready to serve, pour the strawberry sauce over the homemade cheesecake, slice, serve with a dollop of whipped cream, and enjoy!
