Mix cream cheese, add vanilla, sour cream, sugar, & lemon zest, & beat until combined.
Add eggs one at a time & beat until just combined.
Pour the cheesecake filling on top of the Graham cracker crust (we have an easy Graham cracker crust recipe.)
Bake for 75 minutes, leave to cool, & then chill for 4 hours.
Add pureed strawberries, cornstarch, sugar, lemon juice, lemon zest, & vanilla, & boil.
Remove from the heat & let cool.
Add to the top of the chilled baked cheesecake.
