HOW TO MAKE VEGETARIAN SHEPHERD'S PIE

Vegetarian shepherd's pie is a  hearty, healthy family comfort food.  It's packed full of lentils & veggies, in the most delicious sauce, topped with smooth creamy mashed potato - does it get any better than this? 

Ingredients you'll need

Preheat your oven to 400°F & peel & chop your potatoes.

Drain the potatoes & return to the pan. Add milk & butter.  Mash the potatoes until they are a smooth creamy consistency, then set aside

 In a large pan over medium heat, heat olive oil, & then add onions, celery, garlic, carrots, & mushrooms. Sauté until onions are golden brown.  Next, add cooked lentils & frozen peas and stir to combine.

 Next, add cooked lentils  & frozen peas, Italian  seasoning, smoked paprika, &  cornstarch then stir to combine

 Add soy sauce, balsamic vinegar, vegetarian Worcestershire sauce, &  tomato sauce, stir to thoroughly combine

 Add in vegetable broth, stir to combine, season with kosher salt & pepper, & cook until the mixture starts bubbling, &  then take the pan off the heat

 Now, place the lentil mixture in an ovenproof dish, ensuring that it is an even layer

 Spread the smooth mashed potatoes on top of the filling, making sure that you have an even layer

Run the back of a fork over the mashed potatoes, which will make for a crispier topping.

Place on a baking sheet to avoid spills, & bake it in the oven for 30 minutes, turning  it halfway through to ensure  an even cook.  When it's ready, the topping will be golden brown & crispy, for extra crispiness, you can place it under the broiler

Serve immediately, with  fresh vegetables.
