A step-by-step guide to making the best vegan lentil loaf. Delicious & brimming full of  lentils, nuts, veggies, spices,  & topped with an incredible  BBQ sauce!

Ingredients you'll need

Preheat your oven to 175°F & roast pecans and walnuts.

Saute onion, garlic & mushrooms, season with vegan Worcestershire sauce, salt & pepper, until caramelized.

Cook sweet potato & carrots slices until soft & browned. 

Add the roasted nuts to your food processor & pulse until they become a nut meal.

Add your cooked veggies & pulse to combine, so they are smooth but not a puree.

Transfer to a bowl & add tomato paste & Worcestershire sauce.

Add breadcrumbs &  stir to combine.

Place mixture in a prepared loaf pan, compress  & smooth the top.

Make the BBQ sauce, add tomato paste, mustard, liquid smoke, treacle & maple syrup.

Balsamic vinegar, water, chili powder, garlic powder & salt,  & stir to combine.

Spread the BBQ sauce evenly on top of the lentil loaf.

Cook for 45 minutes.

Let the lentil loaf cool for 5 minutes, remove from the tin, slice & serve.
