Split a vanilla pod in two & scrape the seeds out & place the seeds & vanilla bean pod in the pan with the milk & heavy cream, then set aside.

In a mixing bowl, add your
egg yolks & golden castor sugar &, using an electric mixer, whisk until it looks
fluffy and slightly pale.
Heat the cream, milk, & vanilla, add to egg mixture.

Next, pour the hot cream mixture into the ramekins,
& place the prepared tray
in the oven

Bake for 30/35 minutes.

the dish & place them on a
cooling rack to cool to
room temperature.
