best nut roast recipe. ever!

Bursting with flavor, packed full of nuts, lentils, vegetables, & herbs, this is quite possibly the best vegan nut roast you’ll ever taste! 

Great for Sunday lunch, Christmas dinner, or Thanksgiving dinner. We’ve learned to slice it quite thick because people like a big wedge, it’s just SO good!

Roast Brazil nuts, walnuts, hazelnuts & pecans.

Peel, chop & boil the parsnips.

Mash your cooked parsnips.

Fry your onions. 

Add your garlic & fresh chili.

Add lentils, mushrooms, carrots, red pepper, tomato paste & stir to combine.

Add breadcrumbs, rosemary, sage, thyme, allspice,  paprika & nutmeg.

Add vegetable broth/stock & stir to combine. 

Blitz half of the roasted nuts & roughly chop the other half.

Add all of the nuts to the pan  & stir to combine. 

Add orange zest &  stir to combine. 

Add your mashed parsnip  & stir to combine.

Wipe the insides of a loaf tin with vegan butter. Fill the loaf tin with the mixture & press down so it's compact.

Cook covered with foil for 1 hour, then remove the foil & cook for a further 10 minutes. Leave to cool for  10 - 15 minutes.
